Out with the pyramid and in with the plate!
Which brings me to the issue of institutional food. Several of us in Rhode Island have been working to bring better qualities to the food served in school and child care settings. As you might imagine, the food in many of these classrooms and child care facilities (including Head Start) meet USDA nutrition specifications (…but are processed, bland, and ugly). All programs have a nutritionist who follows those USDA guidelines.
Hopefully there new ‘plate’ will have guidance emphasizing fresh foods, locally acquired where possible, with no additives.
